What You Need

Ingredients

8oz. Pero Family Farms Broccoletti, steamed in microwave
5oz. Pero Family Farms Mini Sweet Pepper Rings, diced
6 English muffins, cut in half and toasted
6 eggs, poached
6 pieces of Canadian bacon
1 cup hollandaise sauce
Salt and pepper, to taste
Chopped parsley for garnish, optional

Lets Get Started

Directions
  1. Bring 4 cups of water to a boil, add 1 tsp. of white vinegar and 1 tsp. of salt to the water.
  2. Gently add the eggs to the water and cook for 2-3 minutes.
  3. Remove eggs from the water and allow excess water to drain.
  4. Place the bacon on the toasted english muffin then top with Broccoletti and poached egg.
  5. Drizzle the hollandaise sauce over the egg evenly.
  6. Garnish with diced Mini Sweet Peppers, parsley, and season with salt and pepper.
  7. Serve immediately and enjoy!
