What You Need

  • 1 bag Pero Family Farms Mini Sweet Pepper Rings
  • 1 TBLS Olive oil
  • 1 can low or no sodium Kidney Beans, rinsed and drained
  • 1 can low or no sodium Northern Beans, rinsed and drained
  • ½ cup Yellow Onion, minced
  • 1 Garlic Clove, minced
  • 1.25 cup Vegetable Broth
  • 2 tsp Chili Powder
  • 2 tsp Ground Cumin
  • 1 tsp Sea Salt
  • A few pinches Black Pepper
  • Fresh cilantro for garnish (optional)

Lets Get Started

  1. In a dutch oven or soup pan heat olive oil over medium heat. Once hot add onions and garlic. Let this cook for 1-2 minutes, stirring occasionally.
  2. Add the rinsed and drained beans to the pot and the chili and cumin powder. Stir and let this cook for 3-4 minutes on medium heat.
  3. Add the Pero Family Farms Mini Sweet Pepper Rings, season the chili with salt and pepper, and pour in the vegetable stock. Bring this to a light boil. Once the vegetarian chili is at a boil cover the pot and reduce the pot to low heat. Let the chili cook for 12-15 minutes.
  4. Serve immediately and garnish with fresh cilantro.
