  • 8oz. Pero Family Farms Organic Broccoli Florets
  • 1 cup Pero Family Farms Mini Sweet Pepper Rings
  • 3 eggs
  • 1 up small red potatoes, halved
  • ½ cup red onions, thinly sliced
  • ½ cup black beans, drained
  • ½ cup queso fresco, crumbled
  • ¼ cup cilantro leaves, chopped
  • 1 tbsp. olive oil
  • ½ tbsp. smoked paprika
  • Salt and pepper, to taste

Directions
  • Preheat the oven to 350°F.
  • In a large pan, heat the olive oil to medium-high temperature.
  • Next add the onions, peppers, and potatoes to the pan.
  • Cook for 2 minutes.
  • Next, add the broccoli and black beans to the pan.
  • Cook for 1 minute, stirring occasionally.
  • Add the smoked paprika and season with salt and pepper, stirring to combine.
  • Transfer the vegetable mixture equally to 3 individual skillets.
  • Next, gently add 1 egg to each skillet.
  • Place in a preheated oven at 350° F for 10 minutes or until the eggs are cooked to
    your desired texture.
  • Top with cheese and cilantro before serving.
