What You Need

Ingredients
  • 8oz. Pero Family Farms Trimmed Asparagus
  • 1lb. Salmon filet, skinless, boneless
  • 1 ½ tbsp. orange juice
  • ½ tbsp. chili powder
  • 8oz. Pero Family Farms Mini Sweet Pepper Rings
  • 1 cup pomegranate seeds
  • ½ cup fresh dillweed, chopped
  • Salt and pepper, to taste

Directions
  • Preheat the oven to 350°F.
  • Arrange the asparagus on a baking sheet.
  • Place the salmon on top of the asparagus.
  • In a small bowl, combine the orange juice and chili powder, and pour over top of the salmon.
  • Next, place the Mini Sweet Peppers on top of the salmon.
  • Season with salt and pepper, to taste.
  • Place in oven and bake at 350°F for 20 minutes.
  • Remove from oven and place pomegranate seeds and dill weed evenly over the
    top.
