What You Need

Ingredients
  • 3 eggs
  • 2 cups Pero Family Farms Broccoli Florets, blanched
  • 1 cup Pero Family Farms Mini Sweet Pepper Rings
  • ½ cup cheddar cheese, shredded
  • ½ cup spinach, cut into thin strips
  • ½ cup milk
  • ¼ cup bacon, cooked and chopped
  • Salt and pepper, to taste

Directions
  1. Preheat the oven to 350⁰F.
  2. Coat the inside of a muffin pan with non-stick spray.
  3. In a large mixing bowl, crack the eggs and whip in the milk, salt, and pepper.
  4. Next, add the Broccoli, Mini Sweet Peppers, cheese, and bacon evenly to each muffin section.
  5. Carefully pour or spoon the egg mixture evenly into each section, covering the vegetables.
  6. Bake for 12 minutes or until a toothpick inserted in the center of the muffin comes out dry.
