What You Need

Ingredients
  • 2 cups Pero Family Farms Mini Sweet Peppers, cut into rings
  • 1 cup vegetable stock
  • 1 cup Pero Family Farms Brussels Sprouts, quartered
  • 1 cup bread, cut into cubes
  • ½ cup Candied pecans
  • ¼ cup dried cranberries
  • 1 tbsp. fresh thyme
  • Salt and pepper to taste

Lets Get Started

Directions
  1. Preheat the oven to 350⁰F. Place pepper rings, brussels sprouts, bread, pecans, cranberries, thyme, slat and pepper in a large casserole dish and mix well.
  2. Bring the vegetable stock to a boil and pour over the top of the stuffing mixture.
  3. Place in the over uncovered for 30 minutes or until the vegetables are cooked to your desired texture.
