What You Need

Ingredients
  • 8oz. Pero Family Farms Mini Sweet Peppers, halved – clean out any seeds or ribs
  • 1 cup quinoa, cooked
  • ½ cup cream cheese
  • ½ cup red seedless grapes, halved
  • 1 tbsp. fresh mint, minced
  • Salt and pepper to taste

Directions
  1. In a large mixing bowl add the quinioa, cream cheese, grapes, and mint, salt and pepper. Mix well.
  2. Using a spoon, place about ½ tbsp. of stuffing in each pepper half.
  3. Grill over medium heat for 5-10 minutes.
  4. No grill, no problem! This recipe can also be eaten cold!
