What You Need

Ingredients
  • 8oz. Pero Family Farms® Mini Sweet Pepper Rings
  • 2 eggs
  • 3 redskin potatoes
  • 1 cup kale, sliced into strips
  • ½ cup chicken or turkey sausage, sliced
  • ½ cup onions, sliced
  • 2 cups water
  • 1 tbsp. Olive Oil
  • Salt and pepper to taste

Directions
  1. In a medium sauce pan, bring water to a boil.
  2. Add potatoes, and bring back to a boil. Cook until fork can easily go through potato.
  3. Strain the potatoes and set aside.
  4. Heat the olive oil to medium high temperature in a large saute pan and add the sausage.
  5. Cook sausage until brown.
  6. Next, add onions, Mini Sweet Pepper Rings, potatoes and kale.
  7. Cook for 2-3 minutes on medium high.
  8. Add eggs to the pan and stir constantly until the eggs are cooked.
  9. Serve immediately and enjoy!
