What You Need

8oz. Pero Family Farms Broccoletti, steamed in microwave
5oz. Pero Family Farms Mini Sweet Pepper Rings, diced
6 English muffins, cut in half and toasted
6 eggs, poached
6 pieces of Canadian bacon
1 cup hollandaise sauce
Salt and pepper, to taste
Chopped parsley for garnish, optional

Directions
- Bring 4 cups of water to a boil, add 1 tsp. of white vinegar and 1 tsp. of salt to the water.
- Gently add the eggs to the water and cook for 2-3 minutes.
- Remove eggs from the water and allow excess water to drain.
- Place the bacon on the toasted english muffin then top with Broccoletti and poached egg.
- Drizzle the hollandaise sauce over the egg evenly.
- Garnish with diced Mini Sweet Peppers, parsley, and season with salt and pepper.
- Serve immediately and enjoy!
