8oz. Pero Family Farms Mini Sweet Peppers, sliced into rings
2 tbsp. olive oil
1 sprig of rosemary
Salt and pepper, to taste

Directions
  1. Preheat oven to 350⁰ F.
  2. Slice Mini Sweet Peppers into rings
  3. Place the potatoes and Mini Sweet Pepper Rings into a large mixing bowl.
  4. Add the olive oil and season with salt and pepper.
  5. Mix well.
  6. Next, place the potatoes and Mini Sweet Pepper Rings on a greased sheet tray or in a greased baking dish.
  7. Place in oven and cook for 30 minutes or until the potatoes and Mini Sweet Peppers are cooked to your desired texture.
  8. Place the rosemary sprig on top before serving.
