  • 6 large shrimp, cooked
  • 2 cups vegetable oil
  • 1 cup flour
  • ¾ cup water (cold)
  • ½ cup seltzer water (cold)
  • 1 egg
  • 1 tsp. baking powder

Directions
  1. In a small bowl, combine all of the wet ingredients.
  2. In another small bowl, combine all of the dry ingredients.
  3. Next, in a medium bowl, combine the wet and dry ingredients together and mix lightly, being careful not to overmix.
  4. Heat oil in a large pot to 375° F.
  5. Dip each vegetable into the batter, separately.
  6. Fry each piece individually until it starts floating to avoid them sticking together.
