What You Need

Ingredients
  • 12oz. Pero Family Farms Organic Snipped Green Beans
  • ½ cup grape tomatoes, halved
  • ½ cup corn
  • ½ cup red onion, thinly sliced
  • ½ cup avocado, diced
  • 1 tbsp. olive oil
  • ½ tbsp. lemon juice
  • Salt and pepper, to taste

Directions
  1. Preheat oven to 400⁰F.
  2. Place the Green Beans on a baking tray and drizzle evenly with 1 tbsp. olive oil.
  3. Season with salt and pepper, to taste.
  4. Place tray in oven and roast for 15 minutes or until the Green Beans reach your desired texture.
  5. In a large mixing bowl, add the roasted Green Beans, tomatoes, corn, onion, avocado, and lemon juice.
  6. Mix well and serve!
