What You Need

  • 1lb. boneless skinless chicken thighs, cut into bite-sized pieces
  • 12oz. Pero Family Farms Green Beans, cooked in microwave
  • 2 small Mandarin Oranges, peeled and sectioned
  • 1 cup walnuts
  • ½ cup onions, sliced thin
  • ½ cup orange juice
  • ¼ cup flour
  • 1 tbsp. garlic
  • 1 tbsp. basil, thinly sliced
  • 1 tbsp. olive oil
  • 1 tbsp. parsley, finely chopped
  • Salt and pepper, to taste
  • 1 tbsp butter

  1. Preheat a large sauté pan with olive oil to medium high temperature.
  2. Add onions to the pan and cook for 1 minute.
  3. Dredge the chicken in the flour, and then place into the sauté pan,add salt and pepper
  4. Cook the chicken 2 minutes on the first side, then flip over
  5. Add the butter and garlic and stir well.
  6. Add the orange juice and walnuts.
  7. Stir well.
  8. Add the green beans and oranges.
  9. Cover and cook for 3 minutes or until the chicken is cooked completely through.
  10. Season with salt and pepper, to taste.
  11. Garnish with fresh parsley
