What You Need

Ingredients
  • 12oz. Pero Family Farms Organic Green Beans
  • 1 cup Pero Family Farms Mini Sweet Peppers, cut into rings
  • 1 cup couscous, cooked, chilled
  • ½ cup radicchio, sliced thin
  • 2 tbsp. parsley, chopped
  • 1 tbsp. lemon zest,
  • 1 tbsp lemon juice
  • 1 tbsp. olive oil
  • 1 tsp. minced garlic
  • Salt and pepper to taste

Directions
  1. Blanch the green beans then place into a large mixing bowl.
  2. Add the couscous, Mini Sweet Peppers, radicchio, parsley, lemon zest, lemon juice, oil, garlic, salt and pepper then mix well.
