12oz. Pero Family Farms Organic Green Beans, blanched
1 cup shallots, thinly sliced
1 cup shiitake mushrooms, thinly sliced
1oz. olive oil
Salt and pepper, to taste
Lets Get Started
Directions
- Bring 4 cups of salted water to a boil.
- Carefully place the green beans in the water and cook for 2 minutes.
- Drain and place into cold ice water to chill immediately.
- When chilled, drain the beans and set aside.
- In a large sauté pan add 1 tbsp. olive oil and heat to medium high temperature.
- Add the mushrooms and shallots and cook for 2 minutes.
- Next add the green beans, salt and pepper and cook for 2 more minutes or until the vegetables are cooked to your desired texture.
- Serve In a large bowl or platter.
