What You Need

Ingredients

12oz. Pero Family Farms Organic Green Beans, blanched
1 cup shallots, thinly sliced
1 cup shiitake mushrooms, thinly sliced
1oz. olive oil
Salt and pepper, to taste

Lets Get Started

Directions
  1. Bring 4 cups of salted water to a boil.
  2. Carefully place the green beans in the water and cook for 2 minutes.
  3. Drain and place into cold ice water to chill immediately.
  4. When chilled, drain the beans and set aside.
  5. In a large sauté pan add 1 tbsp. olive oil and heat to medium high temperature.
  6. Add the mushrooms and shallots and cook for 2 minutes.
  7. Next add the green beans, salt and pepper and cook for 2 more minutes or until the vegetables are cooked to your desired texture.
  8. Serve In a large bowl or platter.
