Sweet Holiday Crunch Salad
START TO FINISH
8oz. Pero Family Farms Mini Sweet Pepper Rings
2 cups baby arugula
1 cup apple, sliced thin
1 cup Pero Family Farms Brussels Sprouts, cut in half
½ cup leeks, cut into thin strips
½ cup pecans
1 tbsp. apple cider vinegar
1 tbsp. olive oil
½ tbsp. garlic, minced
½ tbsp. Dijon mustard
½ tbsp. honey
Salt and pepper to taste
- Place the arugula in the bottom of a large salad bowl.
- Next add the sweet peppers, apples, brussels sprouts, leeks, pecans, salt and pepper.
- In a small bowl add the garlic, vinegar, honey and mustard and mix well. Next slowly add the olive oil while stirring.
- Pour the dressing over the salad, mix well and serve.
