What you need

Ingredients

1 bag of Pero Family Farms Broccoli Florets, steamed

1/3 cup Canned no sodium organic corn, rinsed and drained well

2/3 cup Cucumber, peeled and small dice

2 TBLS Fresh Dill, minced, plus more for extra garnish

1-2 TBLS Lemon Juice

2 TBLS Extra Virgin Olive Oil

¼-1/2 tsp Sea Salt

2 pinches of Black Pepper

Directions

  • Steam Broccoli according to instructions on the bag. Once steamed allow the broccoli to cool slightly before assembling the salad.
  • Rinse and drain the corn well and add into a bowl.
  • Add the steamed and cool broccoli into the bowl with corn and chop the cucumber and add into the bowl.
  • In a separate bowl, whisk together the lemon juice, dill, salt, pepper, and extra virgin olive oil. Whisk together and pour over the salad. Toss the salad gently and serve.
