What You Need

Ingredients
  • 10oz. Pero Family Farms Organic Vegetable Slaw
  • 1 cup arugula
  • ½ cup BBQ Slaw Dressing
  • ½ cup corn
  • ½ cup garbanzo beans
  • ¼ cup red onion, sliced

Southwest Slaw Dressing

  • ¼ cup mayonnaise
  • 2 tbsp. your favorite BBQ sauce
  • 1 ½ tbsp. white vinegar
  • 1 tbsp. white sugar
  • ¼ tsp. celery seed
  • Salt and pepper to taste

  1. In a large bowl add the vegetable slaw and dressing and mix well. Top with tomatoes, corn and avocado.

  1. In a small bowl, add the mayonnaise, BBQ sauce, vinegar, sugar, and celery seed. Mix well. Add salt and pepper, to taste.
