An easy and delicious way to get your greens in is with our Sugar Snap Peas! We made this 10 minute Southwest Snap Peas with roasted corn, shallots, mint leaves, fresh orange juice, and olive oil for a quick and healthy meal. Just add your favorite protein!

Southwest Snap Peas:

8oz. Pero Family Farms Snap Peas, chopped

1 cup corn, roasted or grilled

½ cup shallots, cut into thin rings

¼ cup mint leaves

1 tbsp. fresh orange juice

1 tbsp. olive oil

Citrus Greek Yogurt Sauce:

¾ cup plain Greek yogurt

2 tbsp. fresh orange juice

1 tbsp. mint leaves

Salt and pepper to taste

Directions

  • Heat a large sauté pan to medium high temperature and add the oil.
  • Next add the snap peas, shallots and corn and cook for 2 minutes stirring regularly.
  • Remove the pan from heat and add the orange juice, mint, salt and pepper.
  • Serve the citrus sauce on the side.
