GREEN BEAN CITRUS SALAD

These Southwest Citrus Green Beans can be served on the side or as a main plate, just add your favorite protein!

12oz. Pero Family Farms Green Beans
½ cup corn
½ cup red bell pepper, thinly sliced
½ cup red onion, thinly sliced
½ cup feta cheese crumbles
½ cup orange segments
¼ cup cilantro, chopped
1 tbsp. garlic, minced
1 tbsp. Chili powder
1 tbsp. olive oil
Salt and pepper, to taste
- Blanch the green beans and set aside.
- Heat a large sauté pan with olive oil to medium-high temperature.
- Add the corn, garlic, onions, pepper, orange segments, chili powder, salt and pepper. Cook for 2 minutes or until vegetables are cooked to your desired texture.
- Remove from the heat, top with feta and cilantro and serve.
