8oz. Pero Family Farms Sugar Snap Peas

2 cups baby arugula

1 cup beet spirals

½ cup sweet potato cubes, roasted

½ cup walnut pieces

½ cup walnut beet vinaigrette

¼ cup red onion, sliced thin

 

Walnut Beet Vinaigrette

¼ cup walnuts

¼ cup beet spirals

1 tbsp. red wine vinegar

1 tbsp. olive oil

1 tbsp. water

½ tbsp. honey

Salt and pepper

Directions

  • On a large serving plate place the arugula down first then top with peas, beets, sweet potatoes, red onion, and walnuts.
  • Lightly drizzle the vinaigrette over the top and serve.

Walnut Beet Vinaigrette

  • In a blender add walnuts, beets, vinegar, honey, water, salt and pepper- pulse until smooth.
  • Next slowly add the olive oil – serve chilled if possible.
