1 cup orange segments, cut into pieces

½ cup champagne

¼ cup red onion, diced

1 ½ tbsp. fresh mint chopped fine

1 tbsp. olive oil

Salt and pepper to taste

Directions

  • In a large sauté pan pre-heat the olive oil to medium high temperature. Next, add the peas and red onion and cook for 2 minutes.
  • Add the champagne and cook for 2 more minutes then add the mint, orange pieces, and salt and pepper.
  • Cook for 1 more minute or until the peas are cooked to your desired texture.
  • Serve immediately and enjoy!
