What you need

Ingredients

2 cups Pero Family Farms Mini Sweet Peppers, cut into rings

1 cup vegetable stock

1 cup Pero Family Farms Brussels Sprouts, quartered

1 cup bread, cut into cubes

½ cup Candied pecans

¼ cup dried cranberries

1 tbsp. fresh thyme

Salt and pepper to taste

Directions

  • Preheat the oven to 350⁰F. Place pepper rings, brussels sprouts, bread, pecans, cranberries, thyme, slat and pepper in a large casserole dish and mix well.
  • Bring the vegetable stock to a boil and pour over the top of the stuffing mixture.
  • Place in the over uncovered for 30 minutes or until the vegetables are cooked to your desired texture.
