What You Need

  • 1lb. skirt steak, marinated
  • 1lb. Pero Family Farms Mini Sweet Peppers
  • 12 corn tortillas
  • 1 cup Mexican crumble cheese
  • 1 cup fresh cilantro
  • 2 limes, cut into wedges
  • Your favorite Hot Sauce (optional)

Directions
  1. Preheat grill to medium-high temperature.
  2. Grill the steak until cooked to your desired temperature.
  3. While the steak is cooking, grill the Mini Sweet Peppers until cooked to your desired texture.
  4. Thinly slice the steak once it is done cooking.
  5. Next, remove the stems and seeds from the Mini Sweet Peppers and thinly slice them into small rings.
  6. Quickly grill each side of the tortillas.
  7. Add equal amounts of steak and peppers to each tortilla.
  8. Top with cheese, cilantro, and a squeeze of lime juice.
