What You Need

- 1lb. skirt steak, marinated
 - 1lb. Pero Family Farms Mini Sweet Peppers
 - 12 corn tortillas
 - 1 cup Mexican crumble cheese
 - 1 cup fresh cilantro
 - 2 limes, cut into wedges
 - Your favorite Hot Sauce (optional)

Directions
- Preheat grill to medium-high temperature.
 - Grill the steak until cooked to your desired temperature.
 - While the steak is cooking, grill the Mini Sweet Peppers until cooked to your desired texture.
 - Thinly slice the steak once it is done cooking.
 - Next, remove the stems and seeds from the Mini Sweet Peppers and thinly slice them into small rings.
 - Quickly grill each side of the tortillas.
 - Add equal amounts of steak and peppers to each tortilla.
