Mini Sweet Pepper Lettuce Wraps
START TO FINISH
What you need
6-8 Butter Lettuce leaves
¾-1 cup Pero Family Farms Organic Zucchini Spirals, cut in half
1/3 cup Water Chestnuts, diced
1 tsp Black Sesame Seeds for garnish (optional)
Sesame Ginger Dipping Sauce
1 tsp Chives, minced (optional)
½ TBLS Ginger minced
1 tsp Sesame Oil
1 TBLS Honey
½ cup Tamari or Soy Sauce
1 TBLS Water
- In a bowl whisk together the ingredients for the Sesame Ginger Dressing. Whisk well to emulsify the ingredients. The dressing/dipping sauce will keep in the fridge in an air tight container for up to 2 weeks. Make sure to mix the dressing before using it.
- In a separate bowl mix together the cubed mini sweet peppers, the zucchini spirals, chopped water chestnuts, and black sesame seeds. Gently toss this together. To assemble the lettuce wraps place some of the vegetable mix in the center of the butter lettuce leaves. Dip the lettuce wrap into the sesame ginger dressing and enjoy.
