Mini Sweet Pepper Denver Omelet

6 Pero Family Farms Mini Sweet Peppers, diced
½ cup sour cream
½ cup milk
½ cup Pero Family Farms Riced Cauliflower
¼ cup parmesan cheese, shredded
¼ cup arugula
Salt and pepper, to taste
- In a large bowl add the eggs, sour cream, milk, salt and pepper and mix well.
- Spray a 9” pie pan with non-stick spray then pour the egg mixture into the pan.
- Top with Mini Sweet Peppers, Riced Cauliflower, and cheese.
- Bake at 350 for 25 minutes or until the center is solid.
- Top with arugula and serve.
