Directions

  • Preheat the oven to 400⁰F. Place all of the vegetables on a baking tray and spread evenly. 

  • Next, drizzle olive oil over the vegetables. Sprinkle Italian seasoning, salt and pepper evenly over the vegetables and toss gently so that vegetables are evenly coated. 

  • Roast for 18-20 minutes or until the vegetables reach your desired texture.
