Hummus & Veggie Lettuce Cups are the perfectly simple and healthy lunch you’ve been looking for!
START TO FINISH
10.5oz. Pero Family Farms Squash+ Sliced Zucchini, Yellow Squash, Bell Peppers & Onions
1 head of Butter Lettuce
½ cup hummus
2 tbsp. chives, sliced
Salt and pepper to taste
Cook the vegetables to your desired texture using the microwave directions on the back of the package.
Place a tsp. of hummus in each lettuce cup and evenly distribute the vegetables onto lettuce leaves.
Top with chives, salt and pepper.
Serve immediately and enjoy!
