A little bit of savory, with a little bit of sweet – these Grilled Stuffed Mini Sweet Peppers are perfect for a summer afternoon treat!

What you need
8oz. Pero Family Farms Mini Sweet Peppers, halved – clean out any seeds or ribs
1 cup quinoa, cooked
½ cup cream cheese
½ cup red seedless grapes, halved
1 tbsp. fresh mint, minced
Salt and pepper to taste
Let’s Get Started
- In a large mixing bowl add the quinioa, cream cheese, grapes, and mint, salt and pepper. Mix well.
- Using a spoon, place about ½ tbsp. of stuffing in each pepper half.
- Grill over medium heat for 5-10 minutes.
- No grill, no problem! This recipe can also be eaten cold!
