What you need

12oz. Pero Family Farms Organic Green Beans

½ cup Pero Family Farms Mini Cucumbers, peeled and halved

1 Avocado, sliced

2 tbsp. Yellow Bell Pepper, diced

Lime Dressing

1 Garlic Clove

1 tbsp. Honey

¼ cup Lime Juice

1 tsp. Lime Zest

¼ cup Extra Virgin Olive Oil

1 tbsp. Red Wine Vinegar

Salt and pepper, to taste

Directions

  • Cook green beans using directions on the back of the bag.
  • Once cooked, allow beans to cool in a medium serving bowl.
  • Next, place the cucumbers, avocado and yellow bell pepper in the bowl with the green beans.

Lime Dressing

 

  • Add all of the ingredients into a small bowl. Whisk until the ingredients are well combined.
  • Taste and adjust the seasoning to your liking.
  • Pour 3-4 tbsp. of the dressing over the salad and gently toss together.
  • Serve and enjoy!
