8oz. Pero Family Farms Gourmet Trio
½ cup Pero Family Farms Mini Sweet Pepper Rings
1 ear of corn, cut into rounds
¼ cup green onions, thinly sliced
1 tbsp. olive oil
Your favorite corn or flour tortillas
¼ cup micro greens (optional)
Salt and pepper to taste
- Preheat the oven to 400⁰F.
- Transfer the Gourmet Trio and corn to a sheet pan, and drizzle with salt, pepper and olive oil.
- Roast for approximately 20 minutes, or until the vegetables reach your desired texture.
- Scoop veggies into corn or flour tortillas and top with green onions, micro greens and a hint of lime – or even some cheese!
