¾ cup fresh spinach leaves

2 sprigs of fresh rosemary

1 ½ tbsp. olive oil

Salt and pepper, to taste

  • Preheat the oven to 375 F.
  • In a large mixing bowl add Green Beans, potatoes, spinach, Mini Sweet Peppers, and a sprig of rosemary.
  • Next, add the olive oil and salt and pepper, to taste. Mix well.
  • Place the mixture on a large baking sheet and cook for 30 minutes or until the vegetables reach your desired texture.
