4 Canadian bacon rounds, heated
4 tbsp. your favorite hollandaise sauce

Directions
- In a medium pot, bring 4 cups of water and the vinegar to a boil.
- Gently place the eggs into the water for 3-5 minutes depending on your desired texture.
- Top each muffin with one slice of Canadian bacon, then one egg.
- Next, pour 1 tbsp. of hollandaise sauce over each egg.
- Finish with the diced Mini Sweet Peppers and enjoy!
