What You Need

Ingredients
  • 10 oz. Pero Family Farms Butternut Veggie Spirals
  • 1 tbsp. Pero Family Farms Mini Sweet Peppers, diced
  • ¾ cup coconut milk
  • ¼ cup peanuts
  • ¼ cup green onions, thinly sliced
  • 1 tbsp. curry powder
  • ½ tbsp. sesame seeds
  • Salt and pepper, to taste

Lets Get Started

Directions
  1. In a medium sauce pan add the coconut milk, curry powder and peanuts.
  2. Bring heat to medium-high and add the Butternut Veggie Spirals.
  3. Cook for 3 minutes, or until the squash is cooked to your desired texture.
  4. Remove from heat.
  5. Sprinkle remaining ingredients over top: Mini Sweet Peppers, green onions, sesame seeds, salt and pepper – for added kick and flavor!
