What you need

8oz. bag Pero Family Farms Brussels Sprouts, quartered 

1 cup cooked Quinoa 

1 tbsp. Olive Oil 

¼ tsp. sea salt 

½ Red Grapefruit, peeled and chopped 

½ Navel Orange, peeled and chopped 

 

Dressing 

2 tbsp. Orange Juice 

1 tsp. Orange Zest, optional 

¼ cup Extra Virgin Olive Oil 

1 tsp. Apple Cider Vinegar or Champagne Vinegar 

Salt and pepper

Directions

  • Heat olive oil in a sauté pan over medium heat. Once the oil is hot, carefully add the quartered brussels sprouts to the pan and add sea salt. Let the brussels sprouts cook for 8-10 minutes, stirring occasionally. Once the brussels sprouts are cooked and lightly browned, add them into a medium bowl with the cooked quinoa. 
  • Next, add the red grapefruit and navel orange to the bowl with the brussels sprouts and quinoa. 
  • In a separate bowl, whisk together the ingredients for the dressing. Pour the dressing over the dish and gently toss together to coat everything nicely.  
  • Serve and enjoy
