1 small Zucchini, mezzaluna cut
¼ cup Dried Cranberries
¼ cup Chopped Walnuts
2 tbsp. Olive Oil
¼ tsp. Sea Salt
A pinch of Black Pepper

Directions
- In a medium sauté pan heat olive oil over medium heat. Once hot, carefully add the broccoletti and zucchini to the pan. Season with a touch of salt and pepper. Mix this gently and let the vegetables cook for 6-9 minutes. The zucchini should be tender and the broccoletti should be vibrant green and the tops slightly crispy.
- In a small sauté pan add the walnuts over medium heat. Toast the walnuts for about 5 minutes, or until fragrant and golden in color.
- To serve, place all the ingredients on a serving dish. Finish with a garnish of dried cranberries and light drizzle of olive oil.
