- 2 avocados, peeled, seeded and thinly sliced
- 4 pieces of your favorite toasted bread
- 2 eggs, poached
- 2 tbsp. Mexican crumble cheese
- 1 tbsp. fresh cilantro, chopped
- Salt and pepper, to taste
