  • 12oz. Pero Family Farms Butternut Squash
  • 1 cup quinoa, cooked
  • ¼ cup pine nuts, toasted
  • 2 tbsp. basil, sliced thin
  • 1 tbsp. ricotta cheese
  • 1 tbsp. garlic, roasted and chopped
  • 1 tbsp. olive oil
  • Salt and pepper to taste

Directions
  1. Follow the microwave directions on the butternut squash bag and cook to your desired texture.
  2. Place the squash in a large mixing bowl and add the quinoa, pine nuts, basil, garlic, olive oil, salt and pepper.
  3. Mix well and present with the ricotta cheese on top.
