Ingredients
Southwest Snap Peas:
- 8oz. Pero Family Farms Snap Peas, chopped
- 1 cup corn, roasted or grilled
- ½ cup shallots, cut into thin rings
- ¼ cup mint leaves
- 1 tbsp. fresh orange juice
- 1 tbsp. olive oil
Citrus Greek Yogurt Sauce:
- ¾ cup plain Greek yogurt
- 2 tbsp. fresh orange juice
- 1 tbsp. mint leaves
- Salt and pepper to taste

Directions
- Heat a large sauté pan to medium high temperature and add the oil.
- Next add the snap peas, shallots and corn and cook for 2 minutes stirring regularly.
- Remove the pan from heat and add the orange juice, mint, salt and pepper.
- Serve the citrus sauce on the side.
