Southwest Broccoli Salad

  • 8oz. Pero Family Farms Organic Broccoli Florets
  • 8 grape tomatoes, halved
  • ½ cup corn
  • ½ cup black beans
  • ¼ red onion, sliced thin

Chili Lime Dressing

  • ½ cup lime juice
  • ¼ cup honey
  • 1 tbsp. rice wine vinegar
  • 1 tbsp. vegetable oil
  • ½ tbsp. chili powder
  • Salt and pepper to taste

Directions

Southwest Broccoli Salad

  1. Cook the Broccoli to desired texture using microwave directions.
  2. In a large bowl add the cooked broccoli, grape tomatoes, corn, black beans and red onions.
  3. Pour the Chili Lime dressing over the top and mix well before serving.

Chili Lime Dressing

  1. In a small mixing bowl add the lime juice, honey, vinegar and chili powder and mix well.
  2. Continue mixing and slowly add the vegetable oil.
  3. Add salt and pepper to taste
