  • 1 15 oz. can coconut milk
  • 2 cups vegetable stock
  • 1 cup pumpkin puree
  • 1 cup cheese tortellini, cooked
  • 1 tbsp. fresh sage, chopped
  • 1 tsp. pumpkin spice
  • ½ tsp. salt and pepper
  • Garnish with pepitas

Directions
  1. In a large pot, add the vegetable stock, vegetable medley and pumpkin puree.
  2. Stir together and cook on high temperature for 3 minutes.
  3. Next, lower the heat to medium and add the coconut milk, tortellini, sage, pumpkin spice, salt and pepper.
  4. Cook for 5 minutes or until the vegetables are cooked to your desired texture.
