What You Need

  • 2, 8oz. bags Pero Family Farms French Beans
  • 1 cup Fresh Mozzarella Pearls
  • For the Pesto, makes 1 cup
  • 2 Cups Fresh Basil Leaves
  • 2 Cloves Garlic
  • 1/3 Cup Pine Nuts
  • 1/2 Cup fresh Parmesan Cheese, grated
  • 1/4 Teaspoon Salt
  • 1/4 Teaspoon Pepper
  • 1/2 Cup Olive Oil
  • Salt and pepper, to taste

  1. Cook French Beans using microwave directions on the back of the bag. Once cooked, carefully remove the French beans from the bag and allow them to cool in a bowl.
  2. To prepare the pesto, add the fresh basil leaves, garlic, pine nuts, parmesan cheese, salt, and pepper to the bowl of your food processor. Pulse 5 times until a coarse mixture forms.
  3. Turn the food processor on low and slowly add the olive oil in a steady stream.
  4. Add mozzarella to the bowl with the French beans. Pour the pesto over the beans and mozzarella.
  5. Serve and enjoy!
