- 1 head of Butter Lettuce
- ½ cup hummus
- 2 tbsp. chives, sliced
- Salt and pepper to taste

Directions
- Cook the vegetables to your desired texture using the microwave directions on the back of the package.
- Place a tsp. of hummus in each lettuce cup and evenly distribute the vegetables onto lettuce leaves.
- Top with chives, salt and pepper.
