What You Need

  • 2 hearts of romaine lettuce, halved
  • 16 Pero Family Farms Mini Sweet Peppers, grilled
  • ¾ cup feta cheese
  • 1/2 cup fresh lemon juice
  • 1 ½ tbsp. olive oil
  • Salt and pepper, to taste

Lets Get Started

  1. Preheat grill to medium-high temperature.
  2. Grill the Mini Sweet Peppers until cooked to your desired texture.
  3. While the Mini Sweet Peppers are cooking, lightly brush the romaine hearts with the olive oil and place on the grill. Cook for 1 minute on each side.
  4. Remove the lettuce and peppers from the grill.
  5. Top the lettuce with Mini Sweet Peppers and Feta cheese.
  6. Drizzle olive oil and lemon juice and salt and pepper over top and serve.
