What You Need

Ingredients
  • 12oz. Pero Family Farms Organic Green Beans
  • ½ cup Pero Family Farms Mini Cucumbers, peeled and halved
  • 1 Avocado, sliced
  • 2 tbsp. Yellow Bell Pepper, diced

Lime Dressing

  • 1 Garlic Clove
  • 1 tbsp. Honey
  • ¼ cup Lime Juice
  • 1 tsp. Lime Zest
  • ¼ cup Extra Virgin Olive Oil
  • 1 tbsp. Red Wine Vinegar
  • Salt and pepper, to taste

Lets Get Started

Directions
  1. Cook green beans using directions on the back of the bag.
  2. Once cooked, allow beans to cool in a medium serving bowl.
  3. Next, place the cucumbers, avocado and yellow bell pepper in the bowl with the green beans.

LIME DRESSING

  1. Add all of the ingredients into a small bowl. Whisk until the ingredients are well combined.
  2. Taste and adjust the seasoning to your liking.
  3. Pour 3-4 tbsp. of the dressing over the salad and gently toss together.
  4. Serve and enjoy!
