What You Need

  • 10oz. Pero Family Farms Trimmed Asparagus, grilled
  • 8oz. Pero Family Farms Mini Sweet Peppers, grilled
  • ½ cup kalamata olives
  • 1 tbsp. fresh oregano, chopped
  • 1 tbsp. olive oil½ tbsp. red wine vinegar
  • Salt and pepper, to taste

  1. Heat olive oil on a grill pan to medium-high temperature.
  2. Place the Asparagus and Mini Sweet Peppers onto the grill pan and season with salt and pepper.
  3. Cook for 5 minutes on each side or until your desired texture is achieved.
  4. Remove the vegetables from the grill.• Chop the Mini Sweet Peppers, carefully removing the stem and seeds -place into a bowl.
  5. Add the red wine vinegar, kalamata olives and oregano to the Mini Sweet Peppers.
  6. Mix well.
  7. Place the grilled asparagus onto a platter and top with the Mini Sweet Pepper and olive mixture.
