What You Need

Ingredients
  • 1 ¾ cup vegetable stock
  • 1 cup Pero Family Farms English Peas
  • 1 cup short grain rice
  • ½ cup pumpkin, cleaned and diced into small pieces
  • ½ cup mushrooms, sliced
  • 1 tbsp. olive oil
  • ½ tbsp. thyme leaves
  • ½ tbsp. garlic, minced
  • Salt and pepper to taste

Directions
  1. Preheat a large sauté pan with olive oil to medium-high temperature.
  2. Add the mushrooms, pumpkin, peas, and garlic to the pan.
  3. Cook for two minutes, stirring constantly. Next, add the rice to the pan and mix thoroughly.
  4. Add ¼ cup of vegetable stock stirring until the stock is absorbed.
  5. Repeat this step until all the stock is absorbed and the rice is cooked to your desired texture.
