What You Need

Ingredients
  • 6oz. Pero Family Farms English Peas
  • ½ cup Pero Family Farms Mini Sweet Peppers, sliced
  • 1 cup your favorite pasta, cooked al dente
  • 1 tbsp. olive oil

PESTO INGREDIENTS

  • ½ cup fresh basil leaves
  • ¼ cup fresh Italian parsley
  • ¼ cup parmesan cheese, grated
  • 1 tbsp. garlic
  • 1 tbsp. pine nuts (optional)
  • 1 tbsp. olive oil
  • Salt and pepper to taste

Directions
  1. Place all Pesto ingredients into a food processor and pulse until smooth. Set aside.
  2. In a large sauté pan heat the olive oil to medium-high temperature. Add the English Peas and Mini Sweet Peppers to the pan. Cook for 2 minutes.
  3. Next, add the cooked pasta to the pan, and 2 tbsp. of Pesto. Cook for 3 minutes or until the peas are cooked to your desired texture, stirring constantly.
  4. Serve immediately and enjoy!
